An independent guide to the art of fine catering and private cooking, written for the person who has to make the evening happen.
cociana is a guide to dinner in private rooms: a chef’s table for six in a city flat, a long table under olive trees, a wedding banquet in a rented palazzo, a chalet week for fourteen, a yacht crossing where the galley is the size of a wardrobe. We cover twelve markets, ten formats, fourteen chef profiles, twenty menus and the service craft behind all of it, and we turn the arithmetic into ten planners that run in your browser.
What we are not
We are not a booking agency and we take no commission. We do not sell leads, we do not rank suppliers and we publish no paid placements. When a supplier is named in an editorial text it is because the house is part of the public record of this trade, not because it paid to be there.
Where the numbers come from
Every price on this site is a guide price in euros for 2026, built from published menus, quotes hosts have shown us, supplier rate cards and our own calculations. Private dining is priced per evening, per guest and per hand, and it moves with season, city and how far a truck has to drive. Treat our figures as a starting point for a conversation with a caterer, never as a quote. The cost planner shows you the same arithmetic and lets you change every assumption.
How we judge a dinner
The cociana Standard is fifty marks across kitchen, table, service, menu and aftercare. It is the checklist we apply ourselves, and it is written so that a host can hold a quote or a finished evening against it line by line.
Recipes and quantities
Menus carry a home version scaled for six to eight people, and the quantity calculator scales the shopping to any head count. Quantities are written for a plated dinner with bread and wine; buffets, late nights and long tables need the corrections the planner applies for you.
