A backwards plan from the minute your first course leaves the kitchen: crew arrival, prep, table setting, briefing, doors, courses, speeches, coffee and strike.

What it does

Every professional evening is a written timetable. This planner builds one from your seating time and your menu: when the brigade arrives, when the table is set, when the briefing happens, when each course goes out and how long the strike takes. Print it and give it to the kitchen and the captain.

How to use it

  • Set the seating time, the number of courses and the service style
  • Add a reception, speeches or a late supper
  • Read the timeline, minute by minute
  • Copy it into the contract so the hours are paid for

Notes

  • Seat within fifteen minutes of the stated time or cut a course
  • Speeches belong between courses, never during them
  • Strike takes one hour for twelve guests and up to three for a hundred
