When to host in New York
Peak: May to June, September to mid December. Quiet: January to February, August.
- January to MarchQuiet and negotiable. Chefs take private work between restaurant commitments and a Wednesday dinner can be built with a serious kitchen at 20 per cent below season rates.
- April to JuneSpring season, roof terraces return, benefit and wedding calendars compete for staff. June is peak for weddings.
- July to AugustThe city exits to the Hamptons, and so does the trade. August in Manhattan is cheap and sticky; the same chefs are charging double in Amagansett.
- September to DecemberThe real season: fashion and art weeks, corporate entertaining, then the holiday run from Thanksgiving to New Year when every good waiter is already booked.

Where dinner happens
- Lofts and penthouse apartments
- Open plan, so the kitchen is in the room and the chef is part of the show. Good for a chef’s table, difficult to hide a dishwashing station.
- Brownstone parlour floors
- Beautiful, narrow and stacked: the kitchen is one floor from the table and the stairs decide your plating plan.
- Studios and event spaces
- Licensed, insured, with a freight elevator and a loading dock, which is why they cost what they do.
- Roof decks
- A reception, never a kitchen. Everything travels in a hot box and one wind gust ends the canapé plan.

Staff
Hiring here
Manhattan freelance service is excellent and expensive at 40 to 55 euros an hour with four hour minimums, plus union rules in some venues. Captains are worth their premium because they manage the building as much as the table.
Rules
The paperwork nobody mentions
- Certificate of insurance
- Almost every co-op and condo demands a COI from your caterer naming the building, often two weeks ahead. No COI, no service entrance.
- Health permits
- A private dinner in a home needs no permit, but a caterer must hold a New York City permit and food protection certificates. Verify before you sign.
- Building hours
- Service elevators run on schedules, and in many buildings not after 17:00 or at weekends without a fee. That single rule has killed more menus than any allergy.

What does a private chef cost in New York?
800 to 1,200 euros for the day for a chef with restaurant credentials, 500 to 700 for a competent private cook, plus food at 70 to 130 euros a head. A captain and two servers add roughly 1,200 to 1,800 for the evening.
What is a certificate of insurance and why does it matter?
Proof that your caterer’s liability insurance names your building. Most co-ops and condos require it days in advance and will refuse access without it, which ends the dinner before it starts.
Can a caterer cook in my apartment kitchen?
For up to about sixteen, yes, with induction plates and the counters as plating benches. Above that they will build a prep station in another room and you will lose it for the evening.
