Los Angeles
Canyon gardens, produce to match Europe, dinner at seven
Season
When to host in Los Angeles
Peak: April to June, September to November. Quiet: January, August.
- January to MarchCool evenings, rain in February, the quietest and cheapest weeks. Heaters and a covered terrace make it work.
- April to JuneThe best months: citrus into stone fruit, warm evenings, awards and gala season finished, staff available.
- July to AugustHot inland, busy socially, and the city half empties in August. Fire cooking and late dinners are the answer.
- September to NovemberThe second and better peak: tomatoes and figs into persimmons, perfect evenings and the full entertaining calendar.
Venues
Where dinner happens
- Canyon and hillside gardens
- Terraced, with views and no flat ground. Check where the table can stand level and how far the kitchen is from it.
- Mid century houses with indoor and outdoor flow
- Built for this kind of evening, with a kitchen that opens to the terrace and a bar that works.
- Ranch and estate properties in the valleys
- Space for a hundred, a real outdoor kitchen and no neighbour within earshot.
- Studios and galleries on the east side
- Licensed, flexible, with parking, which in Los Angeles is the deciding amenity.
Produce
What to build a menu on
- Santa Monica and Hollywood farmers markets, which professional kitchens actually shop
- Citrus, avocados, stone fruit and tomatoes at a level matching the Mediterranean
- Santa Barbara spot prawns, local uni, day boat rock cod
- Exceptional Mexican and Asian supply chains for everything from masa to sea urchin
Staff
Hiring here
A good freelance pool, much of it from the restaurant world, at 35 to 48 euros an hour. Travel time across the city is real: staff called for 15:00 in Malibu for a Pasadena dinner will cost you two hours each way.
Rules
The paperwork nobody mentions
- Fire restrictions
- Red flag days and brush clearance rules can ban open flame in hillside zones outright. A fire-led menu needs a gas backup in writing.
- Noise ordinance
- Residential noise limits from 22:00 in most of the city, enforced by complaint, and the hill neighbourhoods complain.
- Permits for larger events
- Above roughly fifty guests or with valet and amplified sound, a special event permit and neighbour notification apply. Leave four weeks.

Read onQuestions hosts ask
How much does a private chef cost in Los Angeles?
700 to 1,100 euros a day for a chef with restaurant credentials, 450 to 650 for a private cook, plus food at 55 to 100 euros a head. Hourly service staff run 35 to 48 euros with travel.
Do I need a permit for a garden dinner?
Not for a private dinner of ordinary size. Above about fifty guests, or with valet parking and amplified music, the city wants a special event permit and your neighbours want notice.
What if there is a fire ban?
Have a written alternative: a gas grill, a plancha or an oven-led main. Red flag days are announced with little notice and open flame in hillside areas is then simply illegal.
