A short, expensive season with the best private chefs per square kilometre

Ten weeks of the year Ibiza hosts more private dinners per head than anywhere in the Mediterranean, and the island’s chefs have built a trade around fincas with no kitchen and guests who arrive at eleven.

Ibiza has an unusual trade: a dozen serious private chefs, a hundred competent ones, and ten weeks in which to earn the year. They cook in fincas where the kitchen is a domestic stove beside a cistern, so the island standard is a prep tent behind the house, gas rings, a cold box and a plating table under a lamp. Hosts who have only hired chefs in cities are surprised by how much equipment arrives and how little of the house kitchen gets used.

Prices track the season steeply. The same chef is 550 euros a day in June and 900 in the first week of August, and a villa that wants breakfast, lunch and dinner for twelve for a week will be quoted 9,000 to 16,000 euros plus food. Produce is the weak point: almost all vegetables come by ferry, so a menu built on island fish, salt, herbs, figs and the grill eats better and costs less than one that demands out of season imports.

The format that works here is the long table at dusk: cold raw opening, a grilled fish or lamb in the middle, fruit and a hard cheese at the end, all of it able to wait twenty minutes while the guests watch the sun disappear. The format that fails is the precise plated tasting menu, because Ibizan dinners do not start on time and no brigade in the world can hold eight courses for an hour in the heat.

When to host in Ibiza

Peak: July and August. Quiet: November to April.

  1. May to JuneThe islanders’ favourite weeks. Everything open, nothing full, warm nights from the first week of June and rates thirty per cent below July.
  2. July to AugustPeak. Chefs are on villa retainers, the good ones turn down work in June to hold August free, and every supplier charges the island premium. Book by March.
  3. September to mid OctoberThe other good half of the season. Sea warm, vegetables at their best, closing parties, and a chef free on a Tuesday.
  4. November to AprilMost of the trade leaves. A handful of chefs stay for the residents, and a winter dinner in a finca with a fire is one of the best value evenings in Spain.

Where dinner happens

Fincas and agroturismos
Courtyards, sabina beams, long tables for sixteen to thirty, and a kitchen built for a family breakfast. The prep tent is standard practice.
Cliff villas on the west coast
Sunset is the whole design. Service has to work around a hundred guests taking photographs for twenty minutes at exactly the wrong time.
Beach clubs for private hire
Kitchen, licence and staff included, which in Ibiza is worth the margin.
Boats to Formentera
Lunch afloat, prepared on land. Nothing hot survives the crossing in August, so build it cold and brilliant.

Produce

What to build a menu on

  • Island fish from Santa Eulària and Sant Antoni, sobrassada and payés cheese
  • Vegetables are limited and mostly ferried from the mainland, so order three days ahead
  • Salt from Ses Salines, island olive oil, figs and almonds in September
  • Mainland logistics are a ferry away, which is why island prices are what they are

Staff

Hiring here

Season staff are good, multilingual and fully booked by early July. Butlers and head waiters who have done three Ibiza seasons are worth the premium purely for knowing which road the van can take.

Rules

The paperwork nobody mentions

Private party limits
The Balearic rules on tourist rentals forbid commercial events at many licensed villas, and inspections happen. A private dinner for house guests is fine; a ticketed event is not, and the fines are on the owner.
Noise after 23:00
Strictly enforced in residential zones and around Sant Josep. Dinner service is unaffected, amplified music is not.
Water and power
Fincas run on cisterns and thin supply. A visiting kitchen with three induction plates will trip the house. Ask for the fuse board rating before the menu is fixed.

What does a private chef cost in Ibiza in August?

800 to 1,100 euros a day for a chef with a real fine dining background, 550 to 750 for a solid all rounder, plus food at 55 to 90 euros a head. A week for twelve with breakfast, lunch and dinner is 9,000 to 16,000 plus shopping.

Can I host a party with a DJ at my rented finca?

Only if the house holds an event licence, which most tourist rentals do not. A private dinner with house guests is permitted; amplified music after 23:00 and ticketed events are the two lines that get owners fined.

Is it worth hiring staff from the mainland?

For more than thirty guests in August, yes, flights and a bed still cost less than the island premium. Below that the local crews know the roads and the villas, which is worth more.
