A desert dinner is a small expedition. Everything arrives by vehicle: the kitchen, the power, the water, the cold chain, the furniture, the light and the staff, and everything leaves again at midnight. The cooking that suits it is fire led and patient, lamb or goat in a pit, flatbread baked in front of guests, mezze that sit happily at ambient temperature, and a dessert of dates, nuts and something cold from an insulated box.

The cost is logistics rather than food: 150 to 320 euros a guest in the Gulf, with the vehicles, generator, lighting and crew forming most of it. It is also the format with the least margin for error, because a forgotten item is forty minutes away and a generator failure ends the evening. Professional operators work from a written manifest and bring spares of everything that is electrical.

Two disciplines make it excellent: sand management and heat. Tables, cloths and service stations sit on boards or carpet, bread and butter stay covered, and glasses live upside down until the moment they are used. Winter months only, with a plan for the temperature drop after sunset: blankets, braziers and a hot drink at the end, all of which cost little and are remembered more than the main course.
