Most dinners now carry three or four requirements at the table. Handling them on the night is the most common serious failure in the trade.

A table of twelve in 2026 typically includes at least one vegetarian or vegan, one gluten avoidance, one allergy and one preference that is really a diet. None of that is a problem when it is collected at the invitation stage, written on the seating plan and given to the kitchen two days ahead. All of it is a problem when it arrives verbally at half past seven.

The three rules

In writing, on the plan, carried by one named server. Requirements collected in writing and marked on the seating plan; the plan in the kitchen’s hands 48 hours before service; and one person responsible for delivering any allergy plate to the right guest.

Equal standing

The dish for the guest with a requirement has to be a dish, not a removal. A plate of steamed vegetables in front of the one person the evening was arranged for is the worst moment in private dining, and it is entirely avoidable. The dietary matrix turns your guest list into the document the kitchen actually needs.
